Ingredients
- 1 green bell pepper (diced)
- 1/2 medium red onion (diced)
- 1 jalepeno (seeded and diced)
- 3-4 medium roma tomatoes (diced)
- 2 cans of black eyed peas (rinsed and drained)
- 1 can of black beans (rinsed and drained)
- 1 can of yellow corn (rinsed and drained)
- 1 bunch (about 1 cup) of cilantro leaves (chopped)
- 1 cup of fat free zesty italian dressing
- Juice of one small lime
- 1 tsp. of garlic powder
- Salt and pepper to taste
1. Combine all chopped vegetables together in a large bowl. Add the canned vegetables (rinsed and drained) and stir to incorporate all of the ingredients.
2. Pour dressing and lime juice over the top and season with garlic powder, salt, and pepper. Stir again and refrigerate until ready to eat. Serve with tortilla chips. Enjoy!!
